I have never found a pancake mixture recipe that ever made decent pancakes that i was 100% happy with, the final product was always too dough-y or not sweet enough, it was gluggy or too thin and I was left feeling disappointed every time. I was close to giving up, succumbing to the packet mixture until .. I found a recipe that worked! I made pancakes a few times, and ultimately felt happier and happier with the outcome, and, as I got used to the recipe, I decided to put my own take on it altering it to my satisfaction. 


It's super simple, and 100% yummy! 



Firstly, I want to advise you to use this type of whisk. It is amazing, and if you don't have one, go get one! It's a must in every single kitchen. 


And this is your must have "secret ingredient" - you cannot, and I repeat, cannot make something with eggs in it and not put in vanilla essence. It cancels out the "eggy" taste and that's really important in order to have a delicious, sweet mixture. 


Of course, everyone who has made pancakes in their lifetime, knows they need to wait until they bubble before they flip! Also, little tip - make sure the first pancake you make is little, just as a "tester" to ensure the pan is at the correct temperature.

My boyfriend's brother linked me to a blog filled with baking anecdotes and recipes and I thought to myself, you know, that's something I'd like to fill my time with.
I'm an avid, yet average, baker and I get so much delight out of seeing people enjoy my recipes, hence the title of my blog.

I won't update this blog until I am 100% happy with the recipes I make, but I will endeavour to do so at least weekly, with images for easy reference.
